Still working on those New Year’s resolutions to a healthier you? Try these acai bowls, they are so fresh and healthy and a nice alternative to the regular smoothie. The star of this recipe is the blueberry vanilla extract, don’t leave it out!

Ingredients:

-1 banana

-2 cups of blueberries

-½ tsp of blueberry vanilla extract

-½ cup coconut cream

-2 tbsp acai powder

 

Instructions:

  1. Place all ingredients into a high speed blender to blend until thick and creamy.
  2. Serve on your favorite smoothie bowl topped with your favorites such as, fresh blueberries, granola, and shredded coconut.

Note: The higher speed blender really is useful when making acai bowls. The less liquid used the better it will thicken up. If you don’t have a high speed blender just make this into a smoothie.  If you’re going the route of a smoothie, add more blueberry vanilla extract. Its delish!
