Every year my family gets plenty of Georgia peaches from the Peach Truck when they are delivered here in Michigan.

Since I started making my Grandma's Strawberry Freezer Jam a while ago and everybody loves it, I decided to try making Peach. I'm happy to share the recipe here, as the word is out that it is delicious! Enjoy on top of toast, biscuits or ice-cream! 

This recipe will make about ten 8 ounce jars.

Ingredients:

  • 2 ¾ cups finely chopped fresh ripe peaches (7-9 depending on size)
  • 6 ½ cups sugar (I use half vanilla sugar and half not)
  • ⅓ cup lemon juice (you can use bottled or freshly squeezed)
  • 1 tbsp vanilla paste
  • 2 pouches Certo liquid pectin

Instructions:

  1. Peel, pit and finely chop the peaches (you can use an immersion blender or potato masher) in a large bowl.
  2. Add the sugar to the peaches and mix well. Let stand for about 10 minutes, stirring occasionally.
  3. Add both pouches of liquid pectin, lemon juice and vanilla bean paste to the fruit mixture. Stir continuously for 3 minutes or until the sugar has dissolved.
  4. Pour or ladle into jars (I use a funnel) leaving 1/2 inch space at the top for expansion.
  5. Let stand at room temperature for 24 hours to fully set. Refrigerate for up to 3 weeks, or keep in the freezer for up to a year.
