One of the members of the group named Vicki recently shared her recipe for pecan extract. Doesn't this sound perfect for upcoming baking season? I can already think of all the breads, cookies, cakes, and pies this would be the best addition to. We are so excited to share this recipe in her own words and pictures.
Ingredients:
- 1 cup of pecans
- 2 cups of Titos Vodka
Instructions:
- Place all the ingredients in a glass mason jar.
- Change your pecans out every 3 months
- Strain your pecan mixture at 6 months and it is good to go!
*Tip: I keep my pecans sealed in the freezer for ensured freshness!

Hi Lakey, to change out the pecans, all you have to do is take out the original pecans and replace them with new ones.
It looks like we don’t have a recipe for Spiced Butter Pecan Extract yet, if anyone has a good one please let us know!

We recommend 35-50 percent alcohol, which translates to 70–100 proof.

I’m so glad to read the comment about making pecan sugar with the used pecans from the extract! I make vanilla sugar from the used Madagascar beans, bottle it in a classy glass container with Christmas ribbon and they become gifts for the holidays. The repeat requests come a month or two later for more!!
I have used my pecan extract in all recipes calling for vanilla extract. I open a full bottle of vodka, I fully open my Madagascar beans and add 6 beans to the full bottle, tightly close it, and shake the bottle at least 2/3 minutes 2-3 times a week for a few weeks. The beans remain in the bottle even after a year, and start using the extract after 6-8 months when the liquid is a dark brown. I also buy small 2 Oz brown bottles, label them, tie them with Christmas ribbon and give them to smoky bakers. They love this gift!
I used vodka for my first try. I am using bourbon for this second try. The used pecans I roast just a tad to dry them out, then make my Sandies cookie recipe. Talk about mouth watering taste for my Christmas cookies. (Don’t let the kiddies eat!).
Have you ever used something other than vodka for this recipe? Like rum or bourbon?

Most don’t use this recipe to replace vanilla but rather use it to enhance the flavor of pecans or bring the flavor to a dessert. Hope this helps! :)

Would this be used in place of vanilla in appropriate recipes — like the ice cream?

Question: At my liquor store the Tito’s comes in two sizes- a 12 oz (which I just started my Madagascar vanilla beans in – it’s not quite a 2 fold but more than a single fold) Do you just purchase the larger bottle so you have the 2 cups? I make Tinctures, too, I guess I’ll use the left-overs for that.
